"My daughter used to make this when she was little"
INGREDIENTS:
12 graham crackers
2 cups miniature marshmallows
1 cup semisweet chocolate
chips
1/2 cup salted peanuts
1/2 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Arrange graham crackers to cover the entire bottom of a 15x10 inch pan. Sprinkle marshmallows, chocolate chips, and peanuts over the graham crackers.
3. In a small saucepan, cook the butter and brown sugar until dissolved. Remove from heat and add vanilla. Pour evenly over the ingredients in the pan. Bake for 10 to 12 minutes in the preheated oven. Store in the refrigerator for 3 days or the freezer for 1 month.

Fantasy Fudge
Prep Time: 10 min
Total Time: 25 min
Makes: 3 lb. or 40 servings, about two squares each
3 cups sugar
3/4 cup (1-1/2 sticks) butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 cup)
1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Baking Chocolate, chopped
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup chopped PLANTERS Walnuts
1 tsp. vanilla
LINE 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside. Place sugar, butter and evaporated milk in large heavy saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 4 min. or until candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.
ADD chocolate and marshmallow creme; stir until completely melted. Add walnuts and vanilla; mix well.
POUR immediately into prepared pan; spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled; cut into 1-inch squares. Store in tightly covered container at room temperature.
Size-Wise
A serving of this sweet treat is two squares. You'll find that a small portion goes a long way on chocolate flavor.
Variation - Classic Fantasy Fudge
Prepare recipe as directed, using 3/4 cup (1-1/2 sticks) margarine and substituting 1 pkg. (12 oz.) semi-sweet chocolate chips for the chopped BAKER'S Semi-Sweet Baking Chocolate and a 13x9-inch baking pan for the 9-inch square pan.

Something that is really delicious is fresh pineapple wedges. Just have them with a bowl of marshmallow creme to dip them in. The tangy bite of the pineapple is balanced nicely by the sweet of the creme.

FROZEN PARTY SALAD
Makes: 16 servings, about 1/2 cup each
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup MIRACLE WHIP Dressing
1 can (20 oz.) pineapple chunks, drained
1/2 cup chopped maraschino cherries, drained
1 can (17 oz.) apricot halves, drained, quartered
2 Tbsp. powdered sugar
Few drops red food coloring (optional)
2 cups JET-PUFFED Miniature Marshmallows
1 cup whipping cream, whipped
lettuce leaves
MIX cream cheese and dressing in large bowl until well blended. ADD fruit, sugar and food coloring; mix well. Gently stir in marshmallows and whipped cream. Spoon into 9x5-inch loaf pan. FREEZE 3 hours or until firm. Unmold onto serving platter. Surround with lettuce leaves.

Gradually add to first mixture. Add vanilla and pecans.
Bake in a 9 x 13-inch pan at 325º for 45 minutes or until a toothpick comes
out clean. Remove from oven and cover at once with marshmallows.
Frosting: Blend well. Spread on brownies. Chill, cut into squares, and
serve.
