Bean and Tuna Salad

Introduction
this is a very easy salad, wonderful in summer.
A sparkling white wine (chardonnay) is a good wine with this dish.
Ingredients
15-ounce can cannellini or Great Northern beans, rinsed and drained
6-ounce can white tuna packed in olive oil, drained
1/4 to 1/2 cup finely chopped red onion
2 tablespoons snipped fresh parsley OR 1 tablespoon chopped fresh basil
2 tablespoon extra virgin olive oil
1/4 teaspoon freshly ground white_pepper
Directions
1 In medium bowl, combine beans, tuna, onion, parsley or basil. Drizzle with oil, then sprinkle with pepper.

Greek salad
INGREDIENTS:
•4-5 large, ripe, tomatoes
•1 large red onion
•1 cucumber
•1 green bell pepper
•1/4 pound of feta cheese, sliced
•dried oregano
•sea salt
•top quality extra virgin olive oil
•1 dozen olives
•1 tablespoon of water
PREPARATION:
Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry. Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Slice the cucumber into 1/4-inch slices, cutting slices in half . Slice the pepper into rings, removing the stem and seeds. Slice the onion into thin rings. Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano and salt, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad, either as a slice and toss in some olives. Sprinkle the cheese with oregano (and pepper if desired), mix the oil and water and drizzle over the top, and serve.
tip:put all the vegetables in the refrigirator two hours before make the salad

A favorite of mine is what I call a "put together" dinner. It's a bunch of cold or room temperature finger foods. Ideas include:
brie
bagette (heck, can't spell right now)
some salami
olives
cherry tomatoes
cheese cubes
grapes
carrots, bell peppers, broccoli, etc
And for the adults, add a glass of wine, maybe some fruit for dessert.... soooooo good.

Serve up balogne sandwiches with sides of various vegies and cottage cheese, cold from the fridge! Cold chocolate milk tops it off!

Chinese -- Sesame chicken, teriyaki chicken, steamed rice and lo mein noodles... mmm and it is so hot. I'm roasting... my house is too big to use an air conditioner for all of it so I only have one in my bedroom.

tuna salad... so cut up lots of lettuce, cherry tomatoes, cucumber, eggs and all the rest... open a tin of tuna and put it in your salad and eat it
