Actually you can eat duck eggs and such. I think Chicken eggs are suppose to be the best tasting and easiest to cook with, that's way they are in wide spread use and not another egg. By the way in some places ostrich eggs are a delicacy

In the US and Europe, I think hens are the most common, because they are a multi-purpose animal- eat the eggs, eat the meat (like cattle- milk and meat).

Other places (and other times), other birds' eggs are eaten because other birds are more common... can you imagine the omlet made from an ostrich's egg... WOW!!

People eat Quail eggs, some eat Duck eggs, I am sure that people eat Goose eggs. I think most people (especially in the United States) eat Chicken eggs is because that is what we were taught to eat.
I am sure that people in the Pioneer Days ate whatever eggs they could find, especially if they were hungry.

Where'd you get that idea? Quail eggs, for instance, are quite popular. The main reason more folks don't eat them is, really, that they're simply not made available. One reason for this is baking: we need uniformly-sized eggs for all those cake and pastry recipes that call for eggs in the batter. And ya know - breaking that many quail eggs into a double recipe for my famous carrot cake is just a real pain!

Chicken eggs are eaten, ostrich eggs are eaten and besides, only females lay eggs, if that was just a joke!

Duck eggs are used quiet often, especially for baking, i have heard of people eating quail eggs.

We used to raise ducks and ate their eggs all the time! You should try a cake made with duck eggs! So rich and thick....
