In my opinion, European dark chocolate is the best, barnone. That's not to say that American dark chocolates aren't comparable, but I find the best chocolates in general whether dark, white or milk to be Swiss, Belgian or German; especially when it comes to baking with chocolate. I recommend Lindt, Neuhaus and Leonidas.

You have not truly lived until you have tasted Felchlin !
I bought a 3 bar sampler pack and each one is made from a specific cocoa bean from a special growing region, milk, dark and bittersweet. You will love it.
You can get it here: http://www.chefdepot.com/chocolate.htm
Enjoy!
