Cowboy really relates to the cattle drives that they took part in. They rode horses to maintain the cattle in a controlled line as they moved the steers from one place to another. The term became generalized later on to cover anyone living in the Old West.

I know your punch line is related to 'cow boys' . One can not ride a cow to heard in the cattle so they ride a horse, that is how the name came together to make one cowboys.

A cowboy (Spanish vaquero) tends cattle and horses on cattle ranches in North and South America. The cowboy is normally a ranch hand in charge of the horses and/or cattle, as is the wrangler. In addition to ranch work, some cowboys work in and participate in rodeos, and many cowboys work only in the rodeo..

You wanna know why? The answer lies in the following question:
"WHAT WAS THE MAN RIDING THE HORSE DOING WHEN HE DISCOVERED THAT COWS GIVE MILK???"
:-))))
He then became a cowboy
