2 slices lunchmeat and 1 slice chz per sandwich

2 sandwiches per person

I know not everyone will eat 2, but there might also be a chance some might eat 3. Your safest doing it this way.

It depends on who you are feeding. Is it an even mix of men & women? Mostly men or mostly women? And what else are you serving?
Okay, I will give a general estimation based on mixed company.
For the men, I'd allow for 6oz each (or about 10lbs rounded up) of meat. For the women, allow for 4oz each (or about 6lbs rounded down) of meat. So, 16 pounds of meat.
I always order my cheese by the slice. Order 2 slices for each person + 5 extra. A good deli will not have a problem with doing this for you.
If you know that you have a few BIG eaters, you can always add an extra pound of meat and a few extra slices of cheese.
