Ok, I was thinking of making a chicken sandwhich for lunch today :)

Whole wheat bread
Chicken
Lettuce
Maybe tomato
But I don't want to put mayo on it, what can I put on it instead to make it not so dry that tastes good?

How about trying some ranch dressing? Like mayo but with a kick??
Or, I'm rather fond of honey mustard with chicken.

Good luck! If you can't find the thing you like; you can always chop the chicken up into pieces, add mayo, seedless grapes and chopped apple for a wonderful chicken salad!

Gourmet Chicken Sandwich:

"Sauteed chicken breasts topped with a mayonnaise/mustard/rosemary spread and graced by 2 slices of garlic rosemary focaccia bread. These sandwiches are great when you want a quick supper, but not something from the freezer. They remind me of an expensive sandwich from an upscale deli. The spread and the chicken can be made in advance, and the chicken can be eaten hot or cold."
Original recipe yield: 4 servings.

INGREDIENTS:

* 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
* ground black pepper to taste
* 1 tablespoon olive oil
* 1 teaspoon minced garlic
* 2 tablespoons mayonnaise
* 2 teaspoons prepared Dijon-style mustard
* 1 teaspoon chopped fresh rosemary
* 8 slices garlic and rosemary focaccia bread

DIRECTIONS:

1. Sprinkle pepper on one side of each chicken cutlet. Heat oil in a large skillet; brown garlic in oil, then add chicken, pepper-side-down. Saute chicken until cooked through and juices run clear, about 12 to 15 minutes.
2. In a small bowl combine the mayonnaise, mustard and rosemary. Mix together and spread mixture on 4 slices focaccia bread. Place 1 chicken cutlet on each of these slices, then top each with another bread slice

Olive oil and vinegar is awesome.
Kids like Ketchup & Mustard.
You pick. Chicken is always better with BBQ Rub and cooked on the grill!

Id say that a little bit of honey mustard (or dijon), and if its coming after a big meal stuffing works pretty good to.

Miracle Whip, mustard, cheddar cheese, sweet onion, lettuce, tomato, and a couple mild peppers:) Yummy!

Hennie sauce. It is an smoked ketchup sauce. Only found in Holland shops where they sell holland stuff
