I've heard the saying that adding lemon/lime juice causes rice not to be clumpy (meaning doesn't stick together in one big clump). I was wondering if this was true and how does it work if so?

yes in india they tell like that because lime not only separetes the rice it also gives a very good color bright white to the rice
and also good for health.

I work in a restaurant.

When the rice is sticking or starts to clump, we add clarified butter and mix.

If clarified butter is too hard, use a little olive oil, or melted butter.

It beats having to guess more or less water, but a good rule of thumb is to have twice as much liquid as rice. Now, if you're doing a pilaf, or risotto, that's a whole different story. Also, Chicken stock will give the rice better flavor. A good way to use it would be a 1/1/1 ratio. ex: 1cup rice/1cup stock/1cup water

Wash the rice before cooking and add some oil to the boiling water. It prevents from sticking together.

The amount of water is important too. For basmati rice the water is twice the rice, 2 cups of water for 1 cup of uncooked rice.

The lemon juice or vinegar causes the rice color to be brighter.

I haven't heard this theory.....might be worth a try.

Best way is to rinse the rice before you cook it. This will remove the starch.

Rinse it until the water runs clear. (First few rinses will be cloudy like milk)

i'm Iranian, and you know that we make rice very well. don't add lemon juice. only add less water than before.

Some say yes, others say a some butter or oil. It's your choice.Or you can rinse after cooking until it stops clumping.....

in order not to get it stiky togethr... u have to use the right amount of water... experiment..

experimenting w/ food leads to many discoveries..
