The charger is an energizer NiMh that comes with 4 pcs 2100 mAh batteries, but there are newly available 2500 mAh. Can I buy 2500 mAh and charge it in my charger?

YES. what the Amp-hour or Ah rating is determines the capacity of the battery, the higher the rating, the longer the battery will last. now be advised, it may take slightly longer to charge, but it will last longer than the 2100's.

yes, as long as they are NiMH batteries you should be fine to charge them.
Higher rated mAh batteries will take slightly longer to charge, and it's generally a good idea to make sure to charge only batteries with the same mAh rating at the same time, otherwise you may not get a full charge.

Most NiMh chargers charge up to 2500.

The problem is with the voltage rating not the current rating. The charger's voltage rating is higher than the battery and could damage it AND possibly exploding or causing a fire.
