Well for a variety of reasons really....
First not everyone believed the information in the banned books was truly good scripture. Its much like the denomonational issues we find in churches today. Not everyone believes exactly the same things, even if they are under the same basic beliefs. For this reason many different people only kept the things that they liked. An example is from Marcion, who made up his cannon of strictly the letters attributed to Paul, disregarding the synoptic gospels by in large. Considering the social climate of the period when the writings were being produced, it was often the case that people were not familiar with certain texts. The movable type was over a century and a half away so it was often very difficult to read what other people were writing. People were only influenced by the writings that they had access to and therefore some differing opinions and different texts were disregarded from the final cannon. Along with different percieved heresies it is because of these reasons that the cannon ended up the way that it did.

Greed, manipulation. I am sure what is in there, especially OT is not exactly accurate either. It is very contradictory.
Oh well. They didn't get it all. The real message came through to some.

What books?
There are four canons: Holy Scriptures, Roman Catholic, Protestant, and Orthodox.
Obviously there is some dependencies. Various moments will suppress books, but today (especially in the US), all books include some body not in the canon are available.

I was watching that too! There not IDIOTS. The books they were talking about were not authorized/inspired scripture that was excepted by the Jews of old. They we unauthentic, written way past the supposed date that they claim they were written. Their knid of like the DaVinci Code of their day.

Any number of reasons: they didn't think they fit in the theological context of the rest of the compilation, they said something the rest of them didn't agree with, they could not be verified historically, and on and on. Not everything is a vast conspiracy...just most things.
