try making a philiy cheese steak sandwich..chicken teriaki...go healthy and make an original turkey sandwich like subway...

Two hours before you want the sandwich:

Get some sour kraut and a quart of apple cider. Put the kraut in the cider in a large sauce pan on medium heat. Bring it to a low boil and cook it down, about an hour, then drain the kraut and set it aside.

Take two ounces of sour cream and one ounce of mayonnaise and mix them thoroughly. Add one ounce of very finely diced tomato, one ounce of finely diced sweet onion, half an ounce of VERY finely diced jalapeno pepper, a generous dash of black pepper, the zest of one lemon, and 1/8 teaspoon of cumin seed. Mix well and set aside.



Fifteen minutes before you want the sandwich:

Take a good, very dark rye bread. Pumpernickel if you can get it, and I mean the real stuff, fresh made at the deli, not that pale, insipid excuse they sell at Wal-Mart. This is sliced about 3/8 of an inch thick and lightly toasted. Lightly!

Get a quantity of deli-thin-sliced pastrami. Corned beef is good, too, if you have it, but I prefer pastrami. How much to put on the sandwich is a personal choice, but I like about four ounces per open-faced half.

Shred three ounces of gruyere cheese and three ounces of aged parmesan and mix them.


To assemble:

Place each slice of rye bread on a cookie sheet. Spread a thin layer of the dressing over the top and then cover that with a layer of the sweet kraut. Pile on the pastrami. Mix a bit of the dressing with the rest of the kraut and put a layer on top of the meat. Cover that with the shredded cheese mixture and put those puppies under the broiler for a couple of minutes until the cheese bubbles and begins to crisp. Do NOT burn the bread!

Remove to a plate and prepare your mouth for a taste of heaven. Use a fork, use your hands, I don't care. There is no wrong way to eat this beauty.

I make a killer turkey (ham if you don't like turkey) poboy.
- fresh french bread or hoagie or sub roll or whatever you like to call it.
- thinly sliced turkey (l like to tell the deli person to shave the turkey for me, and I also like to get sara lee hardwood smoked turkey).
-thinly sliced baby swiss
-romaine lettuce
-tomato
-pickle slices
-hellman's mayo (I like to use the low fat)
-spicy honey mustard

Slice the bread lengthwise. Toast the bread, but not too dark, if you don't have a toaster with wide enough slots, warm a skillet and toast it on the stove. On the bottom piece of bread spread the spicy honey mustard and on the top piece spread the mayo. Put the turkey on top of the mustard, and the baby swiss on top of the turkey. Then stack the lettuce, tomato, and pickles. Put the top piece of bread on the delicious stack and make it a sandwich. Cut it in half so that you can see the beautiful layers of color. Make sure you stack the sandwich in this order, it may sound silly but it tastes best this way!

Soak two slices of Texas toast in egg batter, fry on both sides as if making French toast. But then add sliced ham, turkey, and a slice of monterey jack in between and grill until warmed through and cheese is melted.

Melted Swiss cheese, smoked turkey, spinach leaves, avocado and miracle whip sauce, and sun-dried tomato on whole grain wheat bread.

It's my own personal sandwich recipe.
