I can't believe how many people answered this one without knowing what they were talking about. I hope you were all joking.

Cannibals say humans taste like pork. In fact, the slang term for human meat is "long pig," and people who deal with corpses for a living will tell you that a burned corpse either smells sickeningly bad, or else it smells like really good barbecue.

Actually, according to a Fore tribesman (they're the best documented modern cannibals) I communicated with briefly about 20 years ago, humans taste rather like pork, but somewhat sweeter.

Biochemically, this is what you'd expect; our muscle myoglobin level is on a par with pork's, but our muscle glycogen level (glycogen rapidly breakes down into glucose) is somewhat higher...

The modified law of The Mystery Meat suggests that meats with low myoglobin levels tend to taste like chicken (thus, rattlesnake purportedly tastes like chicken), those with more intermediate levels, like pork (or the darker meats in some poultry: have you noticed that there is now turkey ham out there?); and those with the highest levels, like beef (buffalo, with a very high level of myoglobin, is actually beefier than beef...) Take that for what you wish!

beef curiously. in many cultures, human flesh is observed as "long pig". I learnt this over 50 years in the past in grade college, can no longer think of why. many that've tried, say it is like solid veal.
