1 small Octopus, about 3 1/4 pounds
1/2 cup olive oil
Pinch Rosemary
Pinch Oregano
1 bay leaf 1 Bay leaf
1 teaspoon cumin seeds
chopped parsley
1 green chili pepper chopped
1/2 lb. tomatoes, peeled and cut
3 cloves garlic, chopped
salt and pepper
1 lb. spaghetti
Method
Carefully wash and dry octopus. Remove mouth.
Cover the bottom of a saucepan with oil, then add the rosemary, bay leaf oregano, cumin seeds, parsley, chili pepper, tomatoes and chopped garlic.
Place the octopus on top of this mixture and season with salt and pepper. Cover the pot very tightly and simmer for about 45 minutes.
Cook the spaghetti in plenty of boiling salted water until it is "al dente" (firm to the bite).
Drain and turn onto a warm serving dish. Mix the octopus sauce into the spaghetti.
Serve piping hot. Serves 4
NOTE: Using cleaned, fresh squid from the fish counter is easier and cheaper!
Against The Boards Braised Octopus For Two
2 small Octopus, about 1.5 lbs.
1/2 lb. finely chopped onion
2 each tomatoes, skinned and chopped
2 each cloves garlic, chopped
4 tbsp. olive oil
1 oz, pine nuts
6 each fresh basil leaves
1 each small glass white wine
Method
Clean the octopus. Heat oil in a saucepan and saute the onions. When they become transparent, add the garlic and tomatoes. Cook together for a few minutes, then add the pine nuts and the octopus; cook over high heat for another 2 or 3 minutes. Pour in wine, cover pan, and simmer gently until the octopus is cooked (the small ones will cook in less than 10 minutes.)
Just before cooking is completed, add basil leaves and salt and pepper to taste. Serve with rice.
Hockey Puck Octopus Bites
2 cups octopus meat
2 eggs
2 teaspoons of dill weed
2 tbsp. finely chopped onion
1/2 cup breadcrumbs
1/4 cup melted butter or margarine
Method
Boil fresh octopus for at least 10 minutes. Remove skin. The skin and suckers will "slip" off the tentacles when it is cooked. Prepare cooked octopus for tidbits by grinding as you would hamburger. Once is sufficient. No further tenderizing is necessary.
Mix ingredients together. Form into balls no larger than 1" in diameter. Roll in bread crumbs to coat. Pan fry in butter or margarine until golden brown. Garnish with lemon, lime, tomatoes or lettuce.

Stanley Cup Octopus Stew
1/2 cup diced bacon
2 cup water
1 pint fresh octopus, steamed until tender
2 cup slightly undercooked, steamed rice
1 lb. canned tomatoes
1 can okra
1/2 cup diced onions
1 diced green pepper
Diced green pepper
1/4 teaspoon cayenne
1/2 cup diced celery
Salt and pepper to taste Method
Boil bacon in water for 15 minutes, then add the rest of the ingredients.
Simmer together for ten minutes. Serve with warm cornbread.
Serves four.
