The change in texture doesn't really concern me. I just figured to use them in soups and stews anyway. But about dehydrating them in the oven...just slice them and put them on a tray at low temperature? Then once they're dry, freeze them, right?

The tomatoes won't be firm, they will go soggy. However, I freeze leftover tomatoes as well as the ends. When I have a decent amount I make pasta sauce. If you can remove the peel before freezing them, it works much better.

If one puts the tomatoes in boiling water until the skin splits, it's really easy to peel. Just let it cool a bit. Freeze in an airtight container and you're good to go.

If you freeze them , they will be all mushy when you thaw them.
the liquid in the tomato freezes and punctures the cellular structure., which is OK if you are going to use the frozen tomatoes for something like spaghetti sauce.

To keep the texture, it works better to dry them ( in a very low heat oven) , and then to re-hydrate them.

You can freeze dehydrated tomatoes if you want to.

Tomatoes can be frozen whole, chopped or sliced. After removing the skin, cut the tomatoes into the desired size. Place tomatoes into a freezer bag, remove as much air from the bag as possible, seal and freeze. It is best to use the tomatoes within one year. Be sure to label and date your freezer bag.

Nope. They'll turn to mush.

The reason is because freezing breaks down the cellular composition of foods.

no you cannot... they have frozen in my refrigerator before and they get all slimy and they are definitely not good to my opinion to eat.. no i would not recommend freezing tomato slices at all...now i know you can fried green tomatoes.. i mean freeze the green sliced tomatoes and then take them out and roll them in egg and flour and then fry them.. my mom has done this for years....

IDK about tomatos but you could try to suction them in the food saver first. see if that works. what I would do is just make tooooooonnnnnnnnnnssssss of tomato soup and then freeze that. tomato soup will freeze up better than actual tomatos.

rub them with stretch film before freezing. then they'll remain as tomatoe slices

Yes you can. They will be soft but they are good cooked in sauces soups ect.

No, when they thaw again they will not be firm. They may be OK to use in baking or something else like Pasta.
