Really, if you think about it, food that you get anywhere, i.e.restaurants, grocery stores, farmer's markets are all eaten in faith that they were all handled properly. So the same goes for potlucks. I have gone to many potlucks and haven't had a problem yet.
As an extra measure it helps to pray over your food---seriously!

I always use caution in this area. I'm a picky eater so it goes without saying that I need to know the person, before I'll eat their food and then again, I probably still won't eat it if it looks and smells questionable. I don't think there are any particular "safe" foods. In the wrong hands, something as simple as a peanut butter and jelly sandwhich can ruin an eater's day.

An old country pastor gave me this great tip for pot lucks one time. He said when ever he ate at pot lucks, especially in the summer when everyone worrys about dishes with mayonaise in them. He always went home and mixed up a glass of water and cider vinegar [ the amount was half water, half vinegar ] and drank it. The cider vinegar will prevent the bacteria that causes food poisoning from developing. I checked with a doctor on this one time and he said it would probably help with stomach flu as well. I have tried this method with the stomach flu and it did seem to help.

People all over this country have potlucks every single day. If there was an outbreak of food poisoning due to a potluck we would have heard about it. I would be more concerned about restaurant food than potluck food.

The food at a potluck is likely to be as safe, or safer, than what you'd get at most restaurants. My primary concern would be if something has been sitting out a while, is it anything that would easily spoil (such as potato salad..mayo goes bad easily)....otherwise you shouldn't have much to worry about.

of course pot luck is safe...I love pot luck dinners. You of course know the people who will bring the food and their reputations. If you suspect a dish is prepared by someone with questionable food preparation techniques, don't eat their dish but make sure you go early and greet the people at the door. You offer to take their dish to the serving tables and you know which to eat or not.

Don't eat anything with mushrooms.
I have never known any potlucks to have a problem. My mother-in-law however put the family in the hospital with food poisoning.

I have gone to many potluck dinner and have never had a problem. I don't think the food ever lasted long enough to go bad.

People usually go with the best thing that they know how to make, and I find that they do all they can to make it perfect... i would be a litte wary of foods that have sat around in the heat for long periods of time with Mayo in them, or chicken etc...

I never got sick form eating food from a potluck. if you are that worried don't eat anything with meat or mayo.
