Here is my award winning beef stew (OK, so it was only a best answer). I start by cooking a little trinity (diced green pepper, onion and celery) in oil until it is soft. I then add the beef (diced into about 3/4 inch cubes) and cook until the outsides are browned. I add enough water to cover the beef and when the water comes to a boil I turn it down to it's lowest setting and simmer for a couple of hours. I also add salt, pepper, a couple beef bouillon cubes, a little garlic salt and sometimes onion powder. After the stew has been simmering for a couple of hours I add a couple of pounds of sliced carrots and enough water to cover. Same as before, I turn up the heat till the water is boiling then reduce to a simmer. About 10 minutes later I add a couple of pounds of diced potatoes (russets work well). Simmer until the carrots and potatoes are done. I than mix about 1/2 a cup of cold water and 1/4 cup of flour to make a thickening agent. I add a little at a time (remember it takes a few minutes for the stew to thicken) until it is at the thickness I like. This is a very simple recipe with few ingredients and not many spices but it is what I like.

A red wine, Merlot or Cabernet. Make sure you use a wine that you would drink. Its important that you don't use something cheap or lower quality. I only cook with something I can pour a glass of!

The "experts" suggest you drink a red wine with beef but I tend to drink white wine with anything!!!

I like a sweet red wine, but you should buy and drink the kind of wine you like, dose not matter what others think about your choice of wine ! Cheers

I prefer a nice spicy, peppery red zin or syrah. Nice contrast to the stew, and won't fold under the weight of the meal.

Any red wine, I prefer a Lambrusco. Its a soft, semi-dry wine, goes well with almost everything.
