P.S. I know that champagne is French. I added "not sparkling wine" for those who might give me names of California wines or cava wines from Spain, etc.

Dom Perignon has that reputation, but it is according to individual taste, by the way only a French wine from the region of champagne can be called that legally

Dom Perignon. I grew up 25 miles west of Reims, in a small city called Laon. And I have drunk plenty of champagne in my life. I've discovered that champage like other food and drinks has a lot to do with individual taste. I like Moet and Piper Heidensack. I tasted a bottle of Jacquart last year, but I didn't enjoy it. Most likely, it wasn't stored properly and lost a lot of it's taste. Storing champagne in the right temperature is crucial to insure the crisp, tart, bubbly taste.
