How about a 25th anniversary wedding? Find a nice restaurant that can host private parties. Invite your parents to the restaurant for dinner. But also invite their friends and relatives in secret (ask everyone who participate to foot their own bill). Ask if the restaurant can situate the party in such a way that your parents would not know they are about to have a second wedding. After they order dinner and dinner is served, have a folding wall or something open and have everyone tap on their glasses like in a reception.
Couple this and your cake surprise for a real cool evening!
The cabin idea is pretty cool, too.

For my parents 25th we (the 3 kids) rented a cabin at a near by fishing lake. We bought them a gift certificate for dinner, while at dinner we went in and decorated the cabin very romantic with candles, fire in the fireplace (this was in January and cold out) and even a tasteful little board game for the bedroom. We rented the cabin for the whole weekend. They really enjoyed the cabin and the fact we planned them a special weekend getaway.

A friend of mine created a DVD of all the family photo's taken over his parents married life. He set it to the music played at their wedding and it was the greatest thing I had ever seen. Even his dad cried and he is not a sensitive guy. This way it is not a large gift but one from the heart.

A family picture. Get your whole family together to get them a family photo. Have it framed and matted for them.
Or maybe take their wedding photo and a recent photo of them together and have them put on a pillow - one on each side. Maybe with their names and wedding date on wedding side and "together forever" on the recent photo side. Do the pillow in the colors they had as their wedding colors.
Or get a candle and have the wedding and anniversary dates engraved on it with a saying on it like... may you flame burn together always. And again do the candle and engraving colors in their wedding colors. Engraving can be done at most any mall candle store or candle maker.
Good luck... no matter what you get they will love it.

Give them a gift certificate from their favorite restaurant...gc for any airlines so they can go on a trip., send them to a spa for the day, a gc to a nice Hotel for the week-end.
