From simple: You can chop up pieces of almost any kind of foods and mix them in your rice near the end of the cooking time. Some of my favorites are green onion, or pieces of hot dog weiners, sliced baloney or Spam or othe lunch meats. Experiment!

One easy recipe: Cook up some hamburger meat, season it with what you like such as garlic salt, pepper, etc. While it's cooking, put on your rice, get it started cooking. Open a can of mushroom soup and stir it into the cooked hambuger meat. Keep it heating while you gently stir in a can of DRAINED green beans. When the rice is done, put a pile of it on a plate then plop a layer of the hamburger, green bean mixture. Yumm!

Chicken Rice Casserole

2 fresh, boneless chicken breasts, diced
1 c long grain rice, or use Uncle Ben's
1/4 c frozen veggies like peas and carrots or broccoli
1 can Campbells cream of chicken soup
3 tsp sour cream
1/4 c shredded cheese (ie: cheddar, american)
1 small bag of plain potato chips

Add 1 cup rice to 1 cup water in a pot.
Heat until bubbled and turn to low. Cook for 10 minutes, and then turn off heat. You can skip if using Uncle Ben's instant.

Meanwhile, while rice is cooking...
In a large bowl, add frozen veggies, cream mushroom soup, sour cream, shredded cheese and 1/2 cup water. Mix well.

In a baking dish, add the rice then the chicken pieces.
Then add the veggie mix to the baking dish. Cover mix with 1 small bag of crushed potato chips-- about 1 1/2 cups. Add more cheese if desired.

Cover with foil and bake for 45-50 minutes at 350 degrees.

Test rice before serving. Rice should be soft not hard. If not ready, add 1/4 cup water, mix and bake for 15 more minutes.

Buy a box of fired rice by Rice a Roni. Cut 2 or 3 pork chops in small pieces and brown in margarine. In a separate pan scramble 2 eggs and cut them into small pieces. Add 2 more tablespoons of margarine and brown the rice from the box in the same pan the pork chops are in. Add the water and season mix from the rice a roni and add the eggs and simmer on low for about fifteen minutes or until all the water is evaporated. I call it pork fried rice.

Well, there is the classic, mushroom soup, rice, shredded cheddar, broccoli, chicken, bake at 350 for about 45 minutes.

You could also add a bag of mixed frozen vegetables and sour cream and melted butter (with chicken if you want)

You can also go to the grocery store and buy a can of bamboo shoots, waterchestnuts and any other chinese veggies in a can, and they sell chinese style sauces to add to the dish with soy sauce. You could also add chicken or beef to this.

For a cold salad, take cold white or brown rice, add chopped tomatos, lemon juice, green onions and tuna fish and add either ranch or italian dressing.

My Mom used to mix cream soups with rice. It's a great side dish. Or, if you are using flavored rice and not just white rice, those Louis Rich chicken breast strips are a nice addition for a quick and easy meal. I do this sometimes if I am in a pinch.

In a large pan, heat up some oil.. just under enough to cover the bottom of pan, when oil is heated, stir in some rice enough to cover the bottom of pan and a little more... this is frying it. Add some onion and garlic and continue to fry until onion is transparent and rice is browned. then add a can of rotél (it has tomatoes, jalepeno peppers,onions and spices) Simmer until all of the juices are evaporated.

This is my favorite: try adding a can of cream of broccoli soup, then a big handful of chopped broccoli (fresh or frozen), and then some shredded cheese. Let it melt all together, and it is the best thing in the world.

You can also try cream of asparagus with asparagus tips, or cream of chicken with chunks of chicken. You get the idea.

It's really yummy, impossible to mess up, cheap, and quick!

Christmas Rice

1/2 cup finely chopped onion
3 ribs celery -- finely chopped
1/2 medium red bell pepper -- chopped
1/2 medium green bell pepper -- chopped
1 tablespoon butter or margarine
2 cups chicken broth
2 cups uncooked instant rice
1/2 teaspoon salt -- optional
1/4 teaspoon pepper

In a skillet, saute onion, celery, and bell peppers in butter over medium heat
for 2 minutes or until crisp-tender. Remove from the heat; set aside. In a
saucepan, bring broth to a full boil. Remove from the heat. Quickly stir in
rice, celery mixture, salt is desired, and pepper. Cover and let stand for 6
to 7 minutes. Stir before serving.

Louisiana Dirty Rice

Yield: 6 Servings

Ingredients:

3 tbsp. margarine; or chicken fat
6 oz. chicken gizzards; ground
4 oz. ground beef; lean (or pork)
3/4 cup yellow onions; finely chopped
1/2 cup bell peppers; green, finely chopped
1/2 cup eggplant; diced in ¼ chunks
3 cups chicken stock
1/2 tsp. garlic; minced
1 lg. bay leaf
2 1/2 tsp. salt
1/4 tsp. white pepper
1/2 tsp. black pepper; freshly ground
1/2 tsp. cayenne pepper; ground
1/2 tsp. cumin; ground
1/2 tsp. oregano; whole leaf
6 oz. chicken livers, ground
1 1/2 cups raw rice, converted
1/2 cup green onion tops; thinly sliced

Instructions:

Heat a heavy duty saucepan or cast iron skillet over medium heat. Add the margarine or fat, the gizzards and the ground beef or pork.

Brown the meat thoroughly, stirring constantly, about 5 minutes.

Add the onions, bell pepper, celery and eggplant. Cook this mixture about 2 minutes, and add 1/2 cup of the chicken stock.

Cook for 4 to 5 minutes, scraping the bottom and sides of the pan with a metal spoon. (this procedure will intensify the taste of the final product).

Add the ground chicken livers and stir. Add the remaining 2-1/2 cups of chicken stock and bring to a boil. Let simmer for 2 minutes.

Stir in the raw rice and cover the saucepan. Turn the heat to very low and cook for 17 minutes.

Uncover and stir in the sliced green onions.

- 1 cup brown Basmati rice
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 1 garlic clove, minced
- 4 whole cloves
- 1/8 teaspoon salt
- 2 cups chicken broth
- 1 cinnamon stick
- 1 teaspoon vegetable oil
- 1 tablespoon raisins
- 1 tablespoon blanched slivered almonds or pine nuts

DIRECTIONS

Soak rice 2 hours to shorten cooking time. Rinse and drain.
In a large non-stick saucepan, heat 1 tablespoon oil and
saute onion and garlic until tender, 2 to 3 minutes. Add
cloves and cook 1 minute. Add rice and stir to coat. Add
salt, broth and the cinnamon stick. Bring to boil. Cover,
reduce heat and simmer 20 to 25 minutes, until liquid is
absorbed. Discard cinnamon stick. Heat 1 teaspoon oil; add
raisins and almonds and warm. Mix with rice and serve.

2 bags success rice, 1 bag frozen brocolli, velveeta cheese, can cream of chicken or cream of mushroom soup. mix together heat in oven for 30 min @ 350 degrees.... (you can also add cut up pieces of chicken)

How about jambalya or gumbo? You can add things like chicken, shrimp, sausage, crawfish, okra and other veggies, and spices to rice...New Orleans style.
