scalloped potatoes
2 cups milk
2 tablespoon flour
2 tablespoon of margarine
about 5 med potatoes
cook the milk, flour and margarine till it is a med thickness
pour over sliced potatoes and bake for 1 hour in 350 degree oven
you can add some cheese to top if you like but I don't care for cheese.

Stuffed Shells!
It costs about $10 and it's a whole meal.
You take 2 lbs of hamburg (brown it up first)
1 Box of the Large macaroni shells (they look like seashells)
2 packages of shredded colby jack cheese
1 large can and 1 small can of cream of mushroom soup.
You brown the hamburg then mix it with 1 bag of cheese and the 1 large can of soup.
Then you cook the shells according to the box.
Then use a spoon to fill the shells and place them into a baking dish. You should have leftover meat/soup mixture. After all the shells are stuffed and in the pan add the 1 small can of soup to the mix and spoon it over top of your stuffed shells. Then sprinkle the second bag of shredded cheese on top of that.
Bake at 375 for 30 minutes or so to heat the soup and to melt the cheese.
You can also substitute spaghetti sauce or pizza sauce for the cream of mushroom soup and substitute the meat for something else and the kind of cheese. My favorite is with the soup though :).

Take a large can of tuna fish, drain it. One can of cream of mushroom soup. Heat the mushroom soup add a bit of milk to it, but not too much, [ maybe about a half cup of milk.]you don't want the mushroom soup watery like soup. When it starts to simmer add the tuna fish and break it up . While the tuna is heating up take four slices of bread and pop them into the toaster and toast. When the bread is toasted. Put the bread on a plate, give the tuna soup mixture a good stir so that the tuna is mixed up well in the soup and pour some of the mixture over the toast. This is called "Sh-t on a shingle" by the WWII men, I was told by my mother long ago. LOL. Its fast, good , cheap and healthy. If still hungry , make more toast and use up the rest of the tuna soup mixture.

Colcannon
Ingredients:
• 1 lb potatoes
• 1 lb kale (cabbage may be substituted)
• Onion, or leek or scallion (green onion)
• 1/4 cup milk
• Butter, salt and pepper
Directions:
Peel and boil the potatoes. Chop the kale or cabbage fairly small, discarding the large stems. Steam until tender, about 8 minutes. Gently saute the onion (if desired) until golden but not too brown. Mash the potatoes well, and mix with the kale and onion. Add the milk (not too much, until moistened but not wet), and the butter, salt and pepper to taste.
Bake in a medium oven for about 15 minutes.

here's 2 great refreshing recipes that is filling and not expensive
CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

My own version of eggs benedict over toast! Not only is it cheap to make, but it's also easy.
1 fried egg
1 slice of toast
I slice of ham (I fry mine along with my egg)
Drizzle it with gravy.
You can buy ready made gravy in a can (about 80 cents each can but it'll last you a while) or you can use the little gravy ready mix packages (also like 50 cents a package) available in any store.

Currently my favorite really easy, and cheap dish is spicy potato wedges.
Cut your potatoes into wedges, spray with a cooking spray like Pam in the USA or Fry Lite in the UK. Sprinkle with paprika, chilli powder and ground parmasean to taste. Bake in the oven until soft and fluffy when you break one open.

Pound of browned Hamburger
1 or 2 cans of cream of mushroom soup
milk to thin
little bit of Cayenne pepper
mix together heat and serve over hot mashed potatoes.

FRIED RICE. Cook rice, drain and place in fridge for couple of hours. (stops rice from sticking together) Fry some chopped bacon and onions, then add frozen peas, frozen corn kernells, canned prawns (shrimp), and bean sprouts. fry 1 or 2 beaten eggs in a seperate pan, chop, set aside. Add rice to pan stir through, then add egg and soy sauce. salt and pepper too.
