~~Cudighi Stuffed Venison~~

~~8 to 10" venison loin, 1/4 lb cudighi sausage, 1 tablespoon minced shallots, 3 tablespoons bread crumbs, 3/4 cup cubed sweet potatoes slightly cooked, 1 garlic clove pressed, olive oil, salt, pepper,

make lengthwise incision to create pocket in roast, brown sausage with shallots, combine with breadcrumbs and sweet potatoes, pack tightly into roast cavity, tie with butcher twine at one inch intervals, rub with garlic olive oil, salt and pepper, roast for 35 to 40 min. at 425 degrees, baste several times with olive oil, use pan drippings to make gravy, along with 2 cups beef stock and 1 1/2 to 2 tablespoons of flour. stir in sauce pan till gravy consistency is reached.~~

Beer boiled venison/ use garlic powder or salt, with lemon pepper seasoning roll the venison in the spices then simmer over butter in a pan till cooked to your likeing. or make a rub out of lemon pepper and garlic salt and saute with onions and bell peppers.

Try some of the McCormick Grilling items. I think there's about 4 different kinds to suit everyone's taste. It would also depend on what cut you are cooking and how you're cooking it.
