At the banquet there will be mostly teen's and there parents. Also any original recipes would be great, one more thing at the banquet the main course is a pasta.

This is the easiest recipe in the world, and I get requests for it every time I take it to a potluck. You can change the ingredients depending on what fruit you like.

1 can pineapple tidbits
1 can peach slices in light syrup or juice
1 small can mandarin oranges (or clementines, if your store carries them)
1 single serving container of vanilla yogurt
1-2 tablespoons of vanilla instant pudding mix (the powder)
a few handfuls of coconut, if you like

Drain the fruit thoroughly. Stir in the yogurt. Sprinkle the pudding mix over the top and stir - this will thicken it slightly. Use more if it's runny. Stir in some coconut if you like it, or leave it out if you don't.

I don't recommend using grapefruit, but other than that, just about any canned fruit would work well in this. Depending on how many people there will be, you might want to double the recipe.

This will go over well with kids, get a bag of tater tots and thaw mostly. Get sliced of ham and provolone cheese and cut into strips thick enough to wrap around a tater tot. First layer the cheese and ham slices together and then add a tot to each and roll. Cook tots according to package directions or until ham and cheese is melted. When they come out, stick toothpicks thru them and arrange on a platter. Bring along mustard or horseradish sauce to dip. These are good hot or room temp!

You could also make sausage balls:
1 pound sausage
2 cups bisquik
2 to 3 cups cheddar cheese

Mix and bake for about 25 minutes, maybe less at 400.


Or make a big sub and cut into 2 inch pieces and stab with toothpicks for finger sandwiches.


Pigs in a blanket is fun too! Buy Lil Smokies and cresent rolls and cut the triangles into three triangles and wrap and bake for about 15 minutes per batch.

Garlic Parmesan Monkey Bread
3 tablespoons finely chopped green onions
3 tablespoons parsley
1 1/2 teaspoons garlic powder
1/4 teaspoon salt
5 tablespoons butter, melted
2 eggs
2 (1 pound) loaves frozen bread dough, thawed
1/2 cup Parmesan cheese
Grease a 10 inch Bundt pan or tube pan.
In a medium bowl, mix together the green onion, parsley, garlic powder, salt, butter and eggs until well blended. Break the bread dough off in walnut-sized pieces, and dip each piece into the egg mixture.
Place coated dough balls into the prepared pan. Once there is a layer of balls covering the bottom of the pan, sprinkle with Parmesan cheese. Repeat, sprinkling each layer with cheese until everything is in the pan. Cover loosely, and let rise until doubled in size, about 45 minutes. Preheat the oven to 350 degrees F (175 degrees C).
Bake for 30 minutes in the preheated oven, or until golden brown.

ZUCCHINI CASSEROLE
1 1/4 cups saltine crackers (crushed)
1/4 cup margarine (melted)
1 lb. zucchini - chopped (about 3 cups)
1 cup shredded cheddar cheese
2 eggs (lightly beaten)
1/4 cup onion (chopped)
In a small bowl combine cracker crumbs and butter. Reserve 1/4 cup of the cracker mixture for topping. In another bowl, stir together cracker mixture, cheese, zucchini, eggs and onion. Bake in a casserole dish at 325 for 1 hour.

Seafood Salad

Romaine lettuce sliced into one inch pieces
3 diced fruits of your choice...pineapple, cantaloupe, strawberries or grapes
1 small bag frozen 'salad' shrimp (the really tiny ones)
1 jar Marzetti's Poppy seed dressing

Layer all as listed having the shrimp on the top. Drizzle the dressing right before serving. Travels well, can hold up without being chilled constantly. Very flavorful. For those so inclined, you can add thinly sliced red onion.

I think a salad could be nice. There are lots of options. Caesar is always a hit. I also like spinach salad with almonds and mandarin oranges.

The website below has just about any recipe you could ask for. Also, one nice thing is that you can search by ingredient, so if you have something in the fridge that you want to use, they make it easy.

Veggie Pizza, hands down! Bake crescent rolls on the bottom of a 9 x 13 pan. Unroll and pat down. Bake per directions on the crescent roll package.

Top with a layer of (mixed together first), sour cream, veggie cream cheese and a little celery salt.

Than go crazy with any veggies you want, ie: sliced carrots, sliced radishes, small florets of cauliflower, broccoli, green pepper. Finish off with shredded cheddar cheese. Chill, cut and serve.

CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing

Mix ingredients together and serve chilled. Goes great with a glass of iced tea!

You can skip the chicken if you want, and then also add other nuts, cheese, bacon bits, etc.

Go to the grocery store and get something from the deli. Or- make Italian pasta salad. Buy those cool twirly noodles (multi-colored) and add sliced black olives, cubed cheese, tomatoes, green onions, broccoli, whatever else you want, and then just add some zesty italian dressing. So easy to make....

You could do tortilla pinwheels, they are always a hit. (Spread cream cheese on atortilla, add a couple slices of ham or turkey, roll up and slice into pinwheels). You could do a veggie tray, or a dip, most dry soup mixes have recipes on the back of the boxes.
