You can substitute in chicken or shrimp or almost anything for that matter in place of the ham. I'm a vegetarian so I just leave the meat out.
Fettuccini with Ham and Cream
4 oz ham
1/4 cup butter
2 shallots, finely chopped
2/3 cup heavy cream
12 oz fettuccine noodles
1/2 cup grated parmesan
salt
pepper
Cut fat from ham and chop both parts seperately into small squares.
Melt butter in skillet and add ham fat and shallots.
Cook until golden.
Add lean ham and cook 2 minutes more. Season with desired amount of pepper.
Stir in cream and parmesan and keep warm over low heat.
Cook pasta as directed.
Toss pasta with sauce and top with more parmesan if desired.

Many of the large recipes can be made as smaller portions by just cutting the ingredients by half or just making the full recipe and freezing what you don't eat for another day.
Course the most simple recipe is pasta, a bit of oil, maybe some lemon and garlic for flavor, and a pinch of salt/pepper; toss and serve. Use one of the lighter veg. oils like some of the heart healthy ones. Much better for you than butter.
My favorite thing to do is use macaroni noodles or egg noodles, fix them as directed. Add some oil, lemon, salt/pepper, grated Parmesan cheese and for the fun of it.. chop up the pepperoni slices you get at the store to put on pizzas. Yummmy and filling especially if you don't heat the pep slices but serve them up cold. Less grease that way.

Switch regular pasta for whole-grain pasta. Saute chopped veggies, like green and red peppers and mushrooms, then toss them with pasta and a little bit of low-fat Italian dressing. Add some grilled chicken strips to make a meal or eat it as a snack salad.

There is a pasta dish--Meatball Stroganoff--that I make, and every time I do, it just disappears. I make a large amount, and mine goes quicky with three people in my household, plus occasional visits by my mother. If you are the only person in your household, put the remainder in the freezer, and you'll have a quick meal later. Now, I don't use a recipe, typically, so I'll try to translate my "off-the-cuff" cooking into one for you:
Ingredients:
1 lb. of either ground turkey or very lean ground beef or a combination of the two
1 small onion (yellow or white) finely chopped
2 med. cloves garlic, finely minced
1/2 cup finely chopped green bell pepper
1/3 cup minced pimento
approx. 2/3 cup sour cream
1 lg. (family size) can Cream of Mushroom Soup
1 med. can of sliced mushrooms (or more, if you like; I use two)
1 raw egg
1 handful rinsed, drained, and snipped fresh parsley
Nature's Seasons (Morton brand)
Soy or Worcestershire Sauce
Black Pepper
Egg Noodles (or another broad noodle, if you desire)
In a large bowl, using your bare clean hands, mix the meat, egg, onion, bell pepper, garlic, pimento, and parsley. Add the Nature's Seasons, ground black pepper, and soy or Worcestershire Sauce to your own personal taste. Make sure all the ingredients are evenly blended.
Heat a large skillet or wok. Form small, firm meatballs, and begin adding them to the skillet. (If you use only ground turkey, then heat a small amount of olive oil.) Use a wooden utensil or tongs to turn them so all sides brown very well. If you need to remove some of the meatballs to a warming dish to make room for others, do so. When all meatballs are thoroughly done, remove them to the warming dish (or just a stoneware plate or metal pan in a warmed oven). Drain any excess oil from the pan, but leave the browning and some of the pan drippings.
Start your egg (or other large) noodles in a stockpot or dutch oven.
Deglaze the pan contents by adding the contents of the mushroom can--liquid and all. Use your wooden utensil to loosen the browned bits from your skillet. To this, add the can of cream of mushroom soup and the sour cream. Stir until all ingredients are evenly mixed.
Set aside your noodles to drain in a collander.
Return your meatballs to the soup/mushroom/sour cream mixture to simmer for a minimum of 20 minutes, checking and stirring frequently.
Serve your pasta topped with the meatballs and stroganoff sauce. A little more snipped parsley is a nice garnish. I also top my bowls of this dish with a few robust shakes of grated parmesean cheese.
Put whatever excess you have in individual serving freezer containers--store the cooked pasta separately in freezer containers--or freezer bags. Then, you'll always have a quick meal ready to prepare for yourself, or if company drops by. This dish is really hearty and good.

NICK'S SPAGHETTI SAUCE
1/4 cup olive oil
1/2 pkg jimmy dean spicy hot sausage
1/2 pound ground beef
1/2 chopped yellow onion
1 small can mushroom stems and pieces, diced
1 large can hunts brand spaghetti sauce with mushrooms
1 large can hunts brand spaghetti sauce with meat
2 cloves garlic, peeled and cut on ends
Italian seasoning
2 bay leaves
1 dash salt (to taste)
1 dash sugar (to taste)
Heat some olive oil in bottom of a large kettle then, add sausage and beef together and brown meat.
Then add the chopped onions and the mushrooms and saute to cook down and remove excess moisture.
When the onions get transparent and have cooked down add cans of sauce and seasonings. Then reduce heat to a low simmer and cook till small boil point. Careful to stir continually so as not to burn the sauce on the bottom of pan.
Serve over your favorite pasta or use for manicotti or lasagna.

Pasta salad
Pasta--any kind of shaped pasta--penne, radiattore, etc. If you want healthy they have whole wheat pastas, too.
Low fat dressing--Ranch, Italian (whatever you like)
Veggies--carrots, tomatoes, peas, asparagus (again what you like)
Meat--if you want it. Cut ham into chunks, Grilled Chicken in bite-size pieces. Turkey into chunks.
Make pasta as directed, while the water is heating up you can prepare the veggies and meat.
Mix everything together when the pasta is done and slightly cooled.
You can add as much or as little salad dressing as you like.

Pasta Carbonara:
fry small pieces of bacon
If you enjoy and have mushroom and onion, slice it in small pieces and fry with bacon.
boil pasta - whichever you like. I prefer tagliatelle
Rinse off water and put it back in casserole: add a cup of cream and boil till pretty thick. Off the heat - add an egg yolk. Mmmmm
Put the pasta on the plate, bacon on top. Add some herbs or cheese (parmesan) on top. And fresh grounded pepper.

Well pasta is not really good for a diet but I have one I make that is healthy and good for summer time. I chop up tomatoes and cucumbers into small pieces and mix with any shape pasta (I think small shapes work best), balsamic vinegar, olive oil and salt. Its yummy and refreshing.
