Throw it in the air. If it breaks open when it hits the ground, then it is a good ripe pineapple. If it goes thud, then its not ripe.

Choosing A Pineapple
Pineapples do not ripen and get sweeter after they're picked from the plant they grow on, so it's important to choose a good pineapple at the grocery store. According to the Hawaii Department of Agriculture, here's what you should look for:
Select a fragrant, heavy, symmetrical pineapple with crisp green leaves, not dry, yellow ones.
Avoid pineapples with soft spots, watery "eyes", or discoloration.
Pick a pineapple whose shell is golden about halfway up--the gold color starts at the bottom and moves toward the top.
I prefer the hybrid "Super Sweet' or "Golden" varieties. When choosing a hybrid pineapple, my experience is that those with the sweetest, most fragrant smell tend to taste the sweetest.

1. Look at the pineapple. It should be plump and fresh, and the leaves should be green. It should not have any visible bruises. (Image 1)
2. Smell the pineapple. It should have a sweet, pineapple smell at the stem end of the fruit. (Image 2)
3. Touch the pineapple. The shell should give slightly when you push on it, but there should be no large, soft spots that cave in under your touch. (Image 3)

Snap your finger to "thunk" the pineapple. You should hear a healthy "thunk" in response, otherwise it might be rotten inside. Avoid fruits which are overly green.
