Please clarify variety of apple.

Personally, I disagree with the notion that Granny Smith apples make the best cooked apple desserts. When you consider the fact that people were making dishes akin to apple pies, apple crisps, apple streudels, and the like long before there were written recipes or cookbooks, it stands to reason that it comes down to one's personal taste, and which variety is available to them.

When I bake those types of desserts, I tend to buy a variety of apples. It enhances the richness of the flavor and texture, the depth of the flavor, and makes the flavor a bit more complex than using only one variety.

I have used combinations of the following in my baking, to very high reviews from my family and guests:

Jonathan, McIntosh, Pippin, Red Delicious, Golden Delicious, Crispin, Gala, Winesap, Fuji, and yes....Granny Smiths! Be adventurous. Go for it!

When doing ANY baking with apples I find that Granny Smith Apples are the best. They don't get mushy or wilted as the other ones do!

OMG!!! I love baked apple crisp!!! It is awsome!!! You should definatly use Granny Smith apples. They work magic for any kind of apple baking!!!!

I think any green apple would be good, but I prefer to use granny smith.

By far, Granny Smith, they maintain their texture and their shape. Then you don't have apple mush in your crisp.

I like the "mushy" texture of cooked apples, so we use Royal Gala apples, or anything similar in taste and texture. They only have a bit of tang, and have smooth flesh.

Granny Smith! It's gives it a sweet and tart taste! PLus they are hard and can stand up to baking, without getting really mushy!
