the perfect cocktail for summer and for father's day is the gin and tonic, it is crisp and clean and you can serve it with either wedges of lime or lemon
It is extremely simple to make, just pour a shot of gin, bombay works well, into a tall glass with some ice, add the tonic water until the glass fills, garnish with a lime on side of the glass. If you don't like gin, vodka works in this drink too.
You could also make a rum punch, with say Parrot Bay coconut flavored rum added to some hawaiian punch.
Finally, bacardi sells frozen mixers in the freezer aisle at the supermarket, the have margarita, pina colada, strawberry daquiri and others. You can read the label on the little frozen container and it will tell you how to mix thesef frozen drinks up in a blender.

The Mojito of course!!
Mojito recipe - the original authentic recipe from Havana Cuba
1 teaspoon powdered sugar
Juice from 1 lime (2 ounces)
4 mint leaves
1 sprig of mint
Havana Club white Rum (2 ounces)
2 ounces club soda
There are countless recipes for the Mojito (prounced moh-HEE-toh), but this version is for the one Hemingway himself enjoyed at the Mojito's place of birth: La Bodeguita del Medio in Havana, Cuba. If you are throwing a Cuban theme party (Havana night themed party), plan on serving mojitos.
Place the mint leaves into a long mojito glass (often called a "collins" glass) and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime. Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device, though you can also use the back of a fork or spoon if one isn't available). Add ice (preferably crushed) then add the rum and stir, and top off with the club soda. Garnish with a mint sprig.

This is called Paradise Punch.
1/2 cup tequila blanco
1/2 cup vodka
1/2 cup rum
1/2 cup gin
2 cups cranberry juice
2 cups pineapple juice
Pineapple wedges, for garnish
In a large pitcher, combine all ingredients and stir. Serve chilled in iced tea glasses with a wedge of pineapple for a garnish.
I got the recipe from the Foodnetwork website. Semi-home with Sandra Lee has a different cocktail on every show.

I just had a small happy hour on our patio and made rum punch, it was yummy and not too expensive and can be mixed ahead of time and kept in a pitcher.
1 carton orange juice
1 can pineapple juice
1 750 ml Coconut Rum
1 750 ml Dark Rum
light soda like sprite/7up/fresca--can be diet
Mix half the juices together and add coconut rum until you can taste the coconut and then add about half the bottle of dark rum to bring the strength to your liking. Serve on ice with a splash of the soda. This recipe makes about a gallon if you use all the juices and both bottles of rum.

Mojito hands down. Not only is this a very wonderful and refreshing drink but Freshies even puts out a great mix and that cuts the work down to less than half. Don't forget the mint leaves!

I found a great mixer...Its called Orange Dream and it has the tequila already in it. Just put some ice in a blender and add some of this mix. It tastes exactly like Orange Push-Ups..........you can also get other mixes like this called Blenders...there is a Mudslide, and Strawberry Daquari..and a few others. The chaepest palce I found so far to buy them is at the local Super Walmart.

It might sound weird but my new favorite drink is a Meyer's rum and tonic. Dark rum and tonic go wonderfully together. It's a tiny bit sweet and a tiny bit bitter, so it's very refreshing.

Hi-C, Sprite, Rum, Vodka, Malibu, actually, just about any liquor you want goes well with some Hi-C and Sprite.
Sangria is fabulous - a sweet or semi-sweet red wine, a bunch of fruit juice and a bunch of different kinds of liquor. Make your own magic ; )
