Be sure to keep water in it. A big "duh" thing, but I used to mistake meat drippings in there for water, when the water had long evaporated out. All that did was give me dry meat. So put a gallon or two in the pan about every 2 hours or so.

Also, keep your temps under 250ºF. I like it best about 200-210ºF. Nice and easy does it every time.
