Caramel Sauce

1 cup butter
2½ cups brown sugar
dash of salt
1 cup light corn syrup
1 can sweetened condensed milk
1 tsp vanilla

Melt butter in pan. Add sugar and salt; stir thoroughly. Stir in corn syrup and mix well. Gradually add milk stirring constantly over medium heat until brown sugar is no longer grainy. Remove from heat and add vanilla.

To make this a hard, chewy caramel candy , bring temp to 245º on a candy thermometer; remove from heat and stir in vanilla. Pour into a greased 8"x8" pan and cool. Cut into small squares.

Dulce de Leche

1 cansweetened condensed milk
Remove the label from the can of condensed milk. Do not under any circumstances open the can yet. Take the can and stick it in a pot. Cover it with water. Put the pot on a stove and turn up the heat. Let the pot and can simmer gently for about one and a half to two hours for runny dulce de leche, or up to four hours for solid dulce de leche. Add more water, as necessary, when the level boils down too much.

When it's done, let it cool for a while, and then carefully open up the can and eat directly (for the solid variety) or use as a dessert spread (for the liquid variety).

The resulting product should be colored tan or brown.

NOTE: You need to keep a close eye on the can. If it shows any signs of expansion, immediately remove it from the heat and let it cool. If you are concerned at all at the high-pressure nature of the recipe, you may poke a small hole in the top of the can, and lower the water level so that the can is not completely covered. This will allow the internal pressure of the can to be released, but it will also make the recipe take longer (since high pressure reduces cooking time). Be careful. You could blow it up and get a very bad burn. I would poke a hole.

Caramel Chocolate Bars 1 1/2 cups brown sugar, firmly packed 2 cups quick oatmeal 1 (16 ounce) bag chocolate chips 3/4 cup caramel ice cream topping 1 1/4 cups margarine 2 cups flour, plus 3 tablespoons flour 1 teaspoon baking soda 1 teaspoon salt Preheat oven to 350°. Cream brown sugar and margarine. Add dry ingredients reserving 3 Tbsp of flour and stir in the oatmeal. Press 1/2 of the mixture in the bottom of a greased 9 x 13 pan and bake for 10 minutes. Sprinkle chocolate chips over crust. Mix caramel topping with the reserved flour. Drizzle this over the chips. Sprinkle the top with the remaining crumb mixture. Bake for an additional 15 minutes. ***I never used this recipe with a graham cracker crust, but I believe this is a recipe that you'll enjoy***

Take 1 can of sweetened condensed milk , put a few small holes in the lid. Set the can in a small pan, add water until it comes 3/4 the way up the side of the can. Set flame on low, do not let the water boil, do not let the water level get below 1/2 of the can. Add hot water to the pan as needed. Let simmer about 5-6 hours. Let cool a bit and open can. Caramel with no fuss.

Blended Caramel Royale


Ingredients:
2 cups ice
1 1/4 oz. (1 1/2 Tbsp.) Torani Creme Caramel syrup
3 shots (1/4 cup plus 2 Tbsp.) espresso or strong brewed coffee
1 oz. (2 Tbsp.) sweetened condensed milk
splash half & half
Instructions:
Combine ingredients in a commercial blender in the order shown and blend until smooth (about 20 seconds). Yields one 16-oz. drink. Garnish with whipped cream drizzled with Torani Caramel sauce (optional).

add 1 cup white sugar into a thick bottom pan place on heat the sugar will melt and start to caramelize keep stirring when nice caramel color add slowly 1 hot cup of heavy cream whisk it together cook until no lumps strain throu sieve

1 cup sugar and 1/4 cup water cook in sauce pan until a bubbly nutty brown. about 10 min. remove from heat and slowly add 1 cup heavy cream( careful not to scald the cream) return to heat and stir contstanly. boil. sauce will thicken add 1 tsp vanilla extract, and serve warm
