Either a lanfill or a rendering plant. One of the more amazing smells along the NJ Turnpike in the Newark area throughout July and August is from rendering plants. Piles of old meat, dead animals and grease from restaurant grease traps... what a delight!!!

Never eating another McDon's burger EVER!!!!
They toss them over into a ditch or take them to a landfill. I think someplace even use them for compost.
I once new a lady whose grandmother had a meat thermometer in her car. If she thought that the rood kill was fresh, she would check the temp. Good...in the back of her car. Presto...DINNER!

In the Texas Hill Country, if you hit a deer and call right away, a charity group picks it up and feeds the poor with it. I understand that's done in many states.
