I trust just 2 websites for honest, in depth camera reviews (including value for money).
DPreview gives both models a 'highly recommended'
Olympus: http://www.dpreview.com/reviews/olympuse500/
Canon: http://www.dpreview.com/reviews/canoneos350d/
And Steve's Digicams also give them both a great review.
Olympus: http://www.steves-digicams.com/2005_reviews/e500.html
Canon: http://www.steves-digicams.com/2005_reviews/rebelxt.html
I'd go with the Canon for the following reasons:
* bigger viewfinder
* 1,6 vs. 2x focal length multiplier gives more depth of field control (sensor size matters)
* better selection of wide angle lenses and normal zooms in all price segments (including 3rd party offerings)
* better upgrade path

I have several Canon EOS cameras, and love them. I can't say that Olympus is bad, it's just that I've always had good experience with Canon. If you're going to just get the camera for basic use, and don't plan to keep upgrading, then the Olympus with the extra lens might be a better deal. However, if this camera is simply a starting point, you should research and see if Olympus offers the full range of lenses and bodies that Canon's EOS line offers.

i have been attempting to come back to a decision an same element. The canon seems to provide more effective positive effects, it really is what that is all about, i assume. The Olympus is a little more cost-effective, with 2 equipment lenses, yet the different 4 thirds lenses are expensive. The canon can use different makes of lens, alongside with sigma/tamron, that are good lenses at a useful value. Canon have also brought some bit more effective confusion through bringing out the EOS 400D now!
