Possibly because if the plane has an issue before they can use it for a suicide dive, they can ditch and float down safely and live to die another day.

why do kamikazes wear helmets if they are on a suicide mission anyways?

Not necessarily that they must die.If they ar successful on that particular mission, I'm sure they hav 2go back . If they fail at a mission, they rather die than 2return.

Sometimes they may have a change of decision after a bout of G-forces hitting them on their descent and their guts landed before them! It's a case of chickening out b4 hitting ground.
