Because of their unconcious hang-ups and frustrations that they couldn't solve when they are awake. When one person talks in their sleep, it means that they have unsolve issues or they had been through a lot.

Sleeptalking is also known as Somniloquy. It can range from loud talking to low murmurs. Listeners may or may not be able to understand what the person is saying.
Sleep talking can occur by itself or as a feature of another sleep disorder such as:
* REM sleep behavior disorder (RBD) - loud, emotional or profane sleep talking
* Sleepwalking
* Night terrors - intense fear, screaming, shouting
* Sleep related eating disorder (SRED)
Sleeptalking is very common and occurs in almost 50% of young children.
It is usually not dangerous and should not be a cause for alarm.

People do all kinds of things in their sleep. The brain shuts down the connections between our motor functions and our brain motor centers, but some of us do not get complete shut down in all areas, so some people move their arms and legs, some people talk, some people get up and walk. Other animals that have sleep periods do the same thing.

technically due to their brain is not sleeping or resting
as u know we r not for techies
they usually talk about their dreams or things which they see in their dream.
dreams ocxcur when we are not satisfied with what we hav got or when we hav been thinking about something for so long

I think it's because while they're dreaming, it gets kinda strong. It sorta puts them in a focusesd trance with that dream .So they wake up with that dream in their head and act according to that dream. Let's say one was dreaming about food, then that person might go after food.
