Blue on Gods represents immortality.
The elephant head is Ganesha's, he was a boy until Parvati's Husband (shiva) cut of the boys head, beacuse the boy was guarding Parvatis bathroom door and did not allow Shiva to enter as he didd not know that he was Parvatis wife.Then Parvati insisted that Shiva fixed the boy, so Shiva caught the nearest animal, cut of its head and replaced the boys head with an elephant head.

I think that it's because in Hinduism, as in Islam, representations of God(s) are forbidden. In Hinduism I think the idea is that if the representation is so obviously a caricature that no one could think of it as a true image of (a) God, then it's ok. Hence the blue skin and elephant heads.

I could be wrong about this, but I'd say it's a better guess than 'because they're man made idols'... that doesn't even make sense!
