It depends on your definition of precious substances.
I agree that the value is not always determined by the price of something.
Saffron or crocus sativus is a small and very beautiful plant having therapeutic properties other than culinary value and it is popular among natural therapists. Its regular use can lower the colesterol levels - therefore it is used as a coajuvant in the prevention or treatment of the related diseases, like cardiovascular diseases, atheromatosis ecc.
It has been also caracterized as antispasmodic and emmenagogue.
It is true that in Greece is not so expensive as it grows naturally in many places. Most known is the village Krokos in Kozani (krokos means saffron in greek) as it has been mentioned previously, where there is a large cultivation and commercialization of the product and is exported all over the world. Another place where this plant can be found is Chania, in Crete but I don't know any action for the commercialization of the product.

I'd say saffron is pretty precious. You always have to have a manager unlock a cabinet just so you can buy a little vial.

Water, nothing can survive without it. Salt is also worth its weight in gold. Saffron is the most expensive spice. Platinum is the most expensive metal.

Saffron Burrows from AbFab? Nah. She's nice and all, but I don't think she's precious...I'm thinking Kate Beckinsale myself.

Well, since humans survive on 3 things...
Air
Food
Water
I would think that these things are the most precious items.

But... if you mean price wise - Antimatter costs $1750 trillion per ounce by one estimate.
