If you want to bake them: place them on your baking pan, in a single layer (not piled on top of each other). sprinkle with seasoned salt or salt and pepper to taste. Sprinkle lightly with oil, and place in oven of 350-400 degrees - it will take a fair amount of time for them to bake (probably 40 minutes or more).
Whichever kind of oil you use, will have an effect on the taste: I like the light taste of Olive oil, but remember olive oil burns easily so use the slower (350 or even 325 degree) oven rather than a hotter oven. I also like the taste of sesame seed oil, with this one you can use a little hotter (400 degree) oven. Or you can, of course, use the plain ol' vegetable oil or corn oil. Peanut oil is also nice, but if you're cooking for other people - be careful- many people are allergic to peanut products.
I suggest NOT using any tropical oils (Palm oil, etc).

DO YOU WANT ANOTHER IDEA:
Boil your wedges until they just begin to get soft, pour into a strainer to drain the water well, then while still hot - deep fry them in hot oil. Beats french fries by a long way. (They will not turn out the same [but still acceptable] if you let the boiled potatoes get cold before frying.
By The Way:
Make sure the deep frying oil is Hot. Like anything deep fried, if the oil is cool, the potatoes will absorb oil and become soggy. Then they are not so tasty.

You can put them in aluminum foil with a little butter and seasoning salts and don't open them until you are ready to serve. They will not be golden brown but they will be wonderful. If you want golden brown, try putting them on a cookie sheet and keep turning, they will be a little dry. You could dip them in butter prior to putting them in the oven and see if that will get them brown and retain some of the moisture in the potato.
I usually make them on the BBQ with the aluminum foil. I put butter, potatos, seasoning salt and sliced onions. Wow, they are wonderful. Put them on the same time you put on the hamburgers or whatever you are having and by the time the meat is done so are the potato's.
Enjoy!!

First, LIGHTLY toss them in olive oil, just enough to coat the slices. Then add some basil, salt, and pepper to the bowl and toss again. Lay them out single layer on a cookie sheet and bake to a golden brown.

Dill is a good sub for basil, too. Just experiment with the seasonings you have and like to use. I've got a GREAT thai seasoning that's awesome on fries.

Toss with olive oil and Morton's Nature's Seasoning or Tastefully Simple's season salt, or Lipton's Onion Soup Mix, or McCormick's Salt Free Garlic and Herb.

Put a little olive oil in a bowl with some rosemary and garlic (can use powder or salt). Stir potatoes in it to coat. Then bake. Yum!

You could try brushing them with melted butter if you aren't worried about your cholesterol. I'm a lemon pepper fiend myself, but you could also try sage or paprika if you are feeling adventurous. Frank's original cayenne pepper sauce is also wonderfully good on wedges if you like a little spice.

Seasoned salt, a pinch of garlic, a pinch of steak seasoning and you cannot forget the cheddar and mozzarella cheese.
You just season them to fit your appetite.
