If you are serious:

Cut out the fruit/pulp

Dry it out; either naturally in the sun or slowly in the oven

Put salt in the bottom of a pistil and mortar and add the dried pulp.

Slowly grind and don't push to hard. Light and slow.

You will soon have a dusty sort of paste.

Take that and put it on something that you can put into your oven and let that dry.

When it comes out -

Flour.

Try to dry it under the sun till the jackfruit really dry it means contain no water (try to squeze it.. haha.. ^^).
And after that just grind the jackfruit until it really really ethereal (i don't know the verb similar to smooth).
or if you can't do that go to the miller to grind the jackfruit. ^^ hope that helps you.. ^^
