Roasted Asparagus

Heat Oven to 425 degrees.
Lay out a bunch of Asparagus spears (with the tough ends broken off) onto a cookie sheet. Spray with cooking spray, then salt and pepper.
Roast for about 10 minutes, but keep an eye on them.
While they're roasting, melt 2 T. of butter in a pan on med heat, shake the pan around a little after it has melted and let the butter brown a little.
Then remove from heat and add a T of soy sauce and a T of balsamic vinegar.
Pull asparagus from oven and put on a serving platter, pour sauce on top.

My favorite vegetables are baby carrots and broccoli.

I don't cook very well, but I do make a mean pasta salad...I usually cut up baby carrots, broccoli, cauliflower, a little bit of a red onion, half of a red, orange, and yellow pepper, and some fresh mozzarella cheese...add minced garlic along with some fun pasta like farfalle or radiatore or even cheese tortellini, pour in some balsamic viniagrette dressing, toss it all together and let it marinade for at least a few hours. Voila! A delicious pasta salad. I hope you enjoy my recipe.

My kids love almost all vegetables raw or cooked. I usually will steam cook broccoli, cauliflower and green beans then lightly skillet toss them with olive oil, little bit of butter and garlic. The kids can't get enought it!

When I do corn on the cob not only do I pore salt in the water but also sugar. The corn comes out sweeter!

Squash....I have a really great recipe for it...
Wash about a 5 for a family of 5
Okay cut up the crook necked regular squash....
into half an inch slices...
put in a skillet with a high brim and cover the slices with water
let it boil till their is not water left..
then add a lot of butter usually one stick of butter..
then just move the squash around in the butter....
do this till their is little to no butter left....
Turn of the fire...
ta da
you know have sauteed squash... enjoy

broc., brussel sprouts and green beans. Yeah I fry them altogether with rice and red beans. Sometimes I add some corn for color.

i LOVE corn on the cob!!!! i put light mayonaise on it and then sprinkle with some parmesan cheese. if i'm in the mood, i'll put some hot sauce on it. mmm!!!! mexican style! LOL.
i also like steamed broccoli with some light mayo too.
