I know this sounds like a lame joke, but yesterday I was about to eat some blue cheese that had been in my fridge, open for a month, and I wondered if it was still safe.

Just to clarify, this isn't blue cheese dressing, it's chunks of blue cheese.

And I'd like to remind everyone that blue cheese smells really strong as soon as you buy it.

It doesn't go bad. It just ages and gets better.

These people say smell it!! HELLO!! have they even seen Blue-Cheese dressing!! It always smells bad!! It is spoiled cheese and milk to begin with!! You're best bet is to look at the date. One month in the fridge is nothing to a sour dressing!! It totally depends on you. It will not hurt you any more if you just freshly opened it, than it would today!! Let me tell ya, certain restaurants use it a whole lot later than a month in the fridge. They just shake it up more!!!
