About a third do. But salmonella may not be the only or the worst pathogen you need to worry about. Campylobacter is a nastier bacteria and about 65% of all US produced chicken is infected. The numbers are far higher in Europe. Virtually every egg in France and Italy is infected and more than half of German and English eggs are infected. Unfortunately, though the percentage of US polutry (eggs and flesh) is less somewhat less likely to be
contaminated, because antibiotic doping in the US industry is rampant, many of our campylocater and salmonella strains are highly antibiotic resistant and threfore more viriulent, so if you get sick, it will be a longer and more paingul road to recovery. More people die of food poisoning in the US than from fires, drowning and choking, combined!! Most are immuno-compromised or members of susceptible populations, like children and the elderly. Your mom's advice is very sound. The FDA, USDA and CDC advise you to treat every piece of chicken and every egg as if it were heavily contaminated. This doesn't mean you shouldn't enjoy poultry, just be extremely cautious. Never eat anything with raw eggs. Never eat undercooked chisken. Never eat a runny yolk. Keep bleach water in your kitchen and NEVER touch any food to any surface touched by poultry or raw eggs before you wash it in very hot, soapy water. Spray with some bleach water you keep in a spray bottle (1/4 tsp per pint) and spray everything down--let the mist dry. Listen to Mom!
