if so how do i make it stick?

rice vinegar is what makes it sticky. It is best with short grain, but not a big deal. Here is a recipe that sushi chefs use to make their sushi rice sticky and sweet.
3 cups Japanese-style rice
3 1/4 cups water
1/3 cup rice wine vinegar
2 tbsp sugar
1 tsp salt

Or try this for a more traditional rice ball;

INGREDIENTS:
4 cups steamed Japanese rice
1 tbsp white sesame seeds
2 sheets dried nori (seaweed)
1 slice of salmon
Salt to taste
PREPARATION:
Salt the salmon slice for 30min. Grill or fry the salmon slice until edges are a little burned. After the salmon cools, flake it into small pieces and set aside. Cut nori seaweed into a medium rectangular shape. (need 8 of these.) Put warm Japanese rice in a large bowl and mix in the salmon flakes and sesame seeds well. Wet your hands in water so that the rice won't stick. Put a pinch of salt on your hands and grab a half cup of warm rice. Form the rice into a round or a triangle shape, by pressing lightly with your both palms. Wrap the rice ball with a sheet of nori.
* You don't have to wrap a rice ball with nori if you prefer.
Makes 8 rice balls.

You need to use short grain rice, because the actual grain contains more starch, which is what makes it sticky.

Any other type of rice wont have the same type of texture you're looking for.

The direct answer to your question is.
No, you cannot use long grain rice. It does not contain enough starch for it to stick together when you form it into balls or roll it.

If its enriched, they probably just added vitamins or minerals into it. Most likely you can continue to use it for your Mexican recipe. Parboiled rice is just rice that has already been boiled partially prior to packaging.
