For an easy breaded shrimp, try Beer Batter. Oil must be hot and deep enough for the shrimp to float as they cook, and do not over cook. Light golden is the desired color.
Peel and wash shrimp and dry on paper towels, making sure they are dry.
Mix together:
1 cup Plain or Self Rising Flour
1/2 tsp Paprika
1/2 tsp salt
1/2 tsp fresh ground pepper
other spice to taste
Open 1 can of beer, take a big swallow (this is important! LOL) and add the rest of the can to the flour. Mix well till no there are no lumps and dip the shrimp one at a time in the batter, dropping immediately into the hot oil. Works well with onion rings, zuchinni sticks, even pickle spears!

Popcorn Shrimp
2 eggs, lightly beaten
2 tablespoons heavy cream
5 teaspoons Essence, recipe follows
2 cups plain bread crumbs
1 pound small shrimp (100 count per pound), peeled
6 cups vegetable oil, for frying
Lemon wedges, for garnish

In a medium-sized, non-reactive bowl, combine the eggs, heavy cream, and 2 teaspoons of the Essence. Whisk well to combine. In a separate bowl, blend the bread crumbs with the remaining 3 teaspoons of the Essence.

Set a 1-gallon stockpot over medium-high heat, add the vegetable oil, and preheat the oil to 360 degrees F.

To bread the shrimp, take about 1/3 or 1/4 of the shrimp and toss in the egg mixture. Let the shrimp sit in the marinade for up to 5 minutes. Remove and place in the bread crumb mixture. Toss well to evenly coat the shrimp, and use a coarse sieve to sift the excess bread crumbs off into another clean bowl. Repeat the process 2 more times with the remaining shrimp and breading.

Place the breaded shrimp in the hot oil in batches, and fry, stirring occasionally, until golden brown, about 2 minutes. Remove the shrimp from the hot oil using a slotted spoon and drain on a paper-lined sheet pan. Serve the shrimp hot and garnish with lemon wedges.

Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly.

You can purchase what is called a Tempura batter at any Chinese grocer. This batter you will only need to add water to,and I add some fresh garlic to the wet batter after it is made. You do not need to add any seasoning as it is already flavored.Follow the instructions on the bag,by rolling the shrimp in a dry flour mix first ,then the wet one,you will need to deep fry, best shrimp you will ever taste.

Corn meal (Not cornbread mix) salt and pepper. Put ingredients in a plastic bag or tupper ware container. Shake and then add shrimp. Shake gently and fry at 400 degrees until golden brown. Do not overcook. You can add any spice to perk up the taste.
