A slightly spicy Indian type chicken kabob with creamy cool yogurt sauce

Ingredients
4 Skinless chicken breasts
Broiler Onions 2 pkg
Green Pepers 2
1 teaspoon Chili powder
1 teaspoon Garlic Powder
1 teaspoon Cumin
1 teaspoon Ground Ginger
1 teaspoon Mild Paprika
1/2 tsp Ground Cinnamon
1/2 tsp Saffron
1/2 tsp Sea salt
1/2 tsp Pepper
4 Table spoons grated onion
4-6 tablespoons Plain yogurt
4 tablespoons Lemon Juice
Yogurt sauce:
1/2 cup Plain yogurt
Fresh chopped mint to taste
1 Squeez of lime juice

Preparation
Cut Chicken and peppers into chunks

Peal onions


Mix all dry ingredients together then add yogurt, grated onion and lemon juice

Add the chicken and sit in frige for 30 minutes

Blend Yogurt sauce ingredients in blender or processor. Keep cool.

When ready to cook Stack onions, peppers and chicken onto skewers.

Grill or briol until done (won't take very long)

Serve with white rice and yogurt sauce

MUSHROOM CHICKEN

4 skinless boneless chicken breasts
12 oz chicken broth
1 can low fat cream of mushroom soup
12 oz sliced mushrooms
scallions
flour
salt n pepper
garlic
milk

1) Heat a skillet. Add olive oil. Heat to shimmering. Saute mushrooms and garlic until just done, about 8 minutes. Remove with slotted spoon to bowl. Set aside.

2) Pound the chicken breasts fairly thin. Coat in flour mixed with s&P, milk, then in flour again. In the skillet, place the chicken and cook 5 minutes on each side.

3) Add Chicken broth and cream of mushroom soup. Cook another 5 minutes, or until cooked through.

4) Add mushrooms and scallions; stir until all is warm.

Serve with mashed potatoes (yummy gravy!) and a veggie. Enjoy!

Rice Krispie Chicken........ You take a box of Rice Krispies and put them in the blender until they are a powder. Then you melt a couple of sticks of butter and roll whatever kind of chicken you like around in the butter, then you roll in the Rice Krispies and you bake at 350 for 45 minutes to an hour or until done. You can also use cheezits. Very good recipe my moms invention :D

here's a great refreshing chicken recipe that is filling and not expensive

CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing

Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2

The only thing my kids get thirds on, my completely half *** backwards way of making chicken alfredo. Boil about 6 lbs. of boneless, skinless chicken breast for about 2 hours. Make 3 boxes of chicken alfredo flavored pasta, I like pasta roni brand. When the chicken is done cut into small pieces and add to the pasta. It's fabulous!

Stewed chicken,you'll neeed some chicken parts such as thighs legs and thighs,a dutch oven one jar of salsa and one jar of chilli sauce.Wash chicken parts add to the dutch oven,then add both jars of sauce,cook on medium heat until chicken is done about an hour.Serve over rice.
