How about making a special meal of his favorite foods or a dessert. I've made a special cheesecake for Valentine's Day, and often make his favorite (simple) meal when he's had a rough day. It doesn't take diamonds to make a lot of men happy...and simple things can mean the most. I baked my guy his special "Grandma's Cookie" recipe for Father's Day and he was ecstatic! He has a sweet tooth and really appreciates my efforts.
If food isn't your forte', I've seen really neat things done with scrap-booking materials. You could matt a picture of him, you, or someone special in your life. You could create a collage or shadowbox of sports or hobby favorites. You could just make a personal card with your thoughts in it.
Then there's the IOU for a car detailing, lawn mowing, or some other task that he normally might do and would free up some "me time" for him. That's always appreciated, and the car (or truck) looks nice for awhile as a reminder of your thoughtfulness.
Or, you could rent a copy of his favorite movie or show and watch it with him. Spending time together is the best gift you could give most dads. Enjoy him while you can.
I'm personally quite frustrated with the commercialism and pressures put on us about these holidays. It's just another day, for cripe sake! Don't drive yourself crazy worrying about this. I'm sure that he won't hold it against you.
I hope this helps

Maybe you can put together a photo album or pictures of you and your dad, and right down a sentence or two about the pictures and it will be like a story. That might be nice. As a dad, I know I would like that.

If you are creative and good with tools you can make him a bench or something for him to use in the gardge. Or if you have brothers and sisters you can help them buy him something.
