You should make a taco salad here is a recipe
Ingredients
1 pound of ground beef or chicken
1 head of lettuce
1 jar of junky salsa ( I use Mild)
2 packages of kraft Mexican blend
1 large bag of Doritos
1 package of taco seasoning
sour cream and tomatoes are optional.
1. Cook the ground beef completely, then drain it and add the salsa and leave it on the stove on warm, make sure you stir it once and a while.
2. Take a 13x9 pan and smash the Doritos but not to much,second layer the shredded lettuce, then add the beef mixture.
3. I f you used sour cream take a spatula and smear it around then add two hand fulls of cheese!, after that add tomatoes and the repeat step two until you cannot fit anymore.
After finishing store in the refrigerator, however the longer you leave it in the soggier the doritos will be, but it tastes delicious. Also right before you serve tit add some doritos on top for show!!
Sometimes if you want to entertain a party a bowl would work too, if you use two pounds just double the recipe!!.

I enjoy making Waldorf Salad with Grilled Chicken, on days like that. Even though the chiken is cooked, if you don't live in a really dry climate, you could cook it on the grill outside, so that you don't heat up the house. Or, you could fry them up in the skillet with a little olive oil and just lightly salt and pepper to taste. They may also be cooked under the grill in your oven. Just smear olive oil all over them, and keep the grill door open a little bit, so they don't burn. Watch them.
Now this is off the top of my head because I generally don't go by recipes:
INGREDIENTS
Boneless, skinless chicken breasts, cubed; allow one per person; I like to marinate mine in the refrigerator for about an hour in soy sauce and chopped garlic.
About a half dozen apples (I prefer to use about three different varieties to enhance the flavor)
A couple of bags of chopped walnuts
About a handful of the raisins of your choice (A nice variation, both for color and flavor, would be to use Craisins, but I've never done it.)
About a two handfuls of the seedless green grapes
Miracle Whip Salad Dressing, or you can use the lite variety
After grilling, allow the chicken to cool. You may do so in the refrigerator, if you like.
Remove the grapes from the stem. Rinse your grapes and allow them to drain on a paper towel.
While it's cooling, clean your apples. I leave the peel on. (I prefer to use Fit for cleaning fruit and vegetables, which is sold in the grocery store.)
After cleaning and coring the apples, cut them into bite-sized chunks. Place in a large bowl.
Toss in the walnuts and raisins.
With the chicken cool to the touch, cut it into bite-sized pieces or cubes. (I use kitchen shears, that I wash in the dishwasher after each use.) Toss the chicken in with the other ingredients.
With a large spoon, add in enough salad dressing to your taste. I don't like mine too wet, while others might prefer it that way.
Mix until everything is covered. Toss in your grapes now, and delicately fold them in. Refrigerate at least a half hour.
You can dole this out right from the mixing bowl, or transfer it to a serving dish.
As a variation, just make the Waldorf Salad and serve the Grilled Chicken separately on the plate without mixing it in.

here's 2 great refreshing recipes that is filling and not expensive
CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

How about a picnic dinner? Picnics generally feature cold foods. Sandwiches or cold fried chicken from your local deli potato or mac salad fresh fruit and anything else you like at picnics You can make it a real picnic and eat in a shady spot in your backyard. And the special bonus is that you'll have an excellent excuse to use paper plates -- less dishes to deal with!

Fresh Tomato Gazpacho
8 quarts worth of fresh tomatoes,
2 English cucumbers peeled chopped
1 loaf sourdough bread crust removed cut into ½ inch pieces
1 ½ red bell pepper, seed and diced
2 cup red onion diced
3/4 cup Sherry wine vinegar
1/2 cup extra-virgin olive oil
1 cup water
1 can of tomato juice
Juice of one lime
2 garlic clove bulbs
½ teaspoon ground cumin
½ teaspoon paprika
salt and pepper to taste
Squeeze the seeds out of the tomatoes by slicing in half and gently squeezing then dice
Add juice and the rest of the items
Puree to taste (I use an hand held blender)
Serve chilled
Garnish with croutons, chive blossoms, hard boiled egg

I like a turkey sandwhich and pasta salad. A quick pasta salad is easy. Cook tri-color noddles and drain. Rinse with cold water and set aside. Chop any favorite veggies. I prefer to make my plain since I have a 2 year old. I cut some white cheddar cheese into little cubes and cut up pepperoni. Toss with cold noddles and add itailian dressing. Its wondeful. And obvioulsy the sandwhich you can make to your liking.

you can never go wrong with a big chefs salad. Make that and some garlic bread with cheese. You can add turkey ham roast beef, all kinds of meat and your lettuce and cheese and tomatoes and of course cucumbers and some red and yellow peppers diced. Very good and easy and quick and great on a hot day........ serve with lemonade

I don't mean to sound flippant here, but one time when it was really hot and my kids were really small and other things were going on that made the situation really uncomfortable, I made milkshakes for dinner for them.
Peanut butter milkshakes are not all that bad for when it is really awfully hot. And nutritionally, they aren't all that bad for you either. Granted you need vegetables and fruit and whole grains and other things, but on a really hot day, Peanut Butter milkshakes are filling, easy, and they cool you off on a hot day.
I admit that they aren't all that wonderful for everyday, but it could be a wonderful way to not work very hard for dinner.

Make a chef salad, or like a cold antipasto salad....roll up some ham salami and cheese (or whatever cold cuts u like) slice them then add ontop of a salad.

I do a nice salad, like cous-cous with fruit and nuts and a light vinaigrette, or some tortellini cooked and chilled with some pesto. Top either one with a grilled chicken breast, and deeelicious!
