I'm going to do some baking. What shouldi make? Have any recipes?

manicotti
1 pkg. (8oz) Martha gooch manicotti
1 lb ricotta cheese
4 oz grated mozzarella cheese
3 tbsp grated Parmesan cheese
2 tsp sugar
1 egg beaten
1 tbsp parsley leaves
1/4 tsp salt
1/4 tsp black pepper
2 cans or jars (15 1/2 oz each) spaghetti sauce

Follow manicotti box directions prepare noodle.

In a medium size bowl, combine ricotta, mozzarella, Parmesan cheese, sugar, egg, parsley, salt and pepper. Beat with electric mixer until well blended. Pour small layer of spaghetti sauce in a 2 to 3 quart baking dish. Fill each piece of manicotti. Sprinkle generously with grated Parmesan cheese. cover with aluminum foil. Bake at 350 degrees in oven for 25-30 mins. Remove cover and serve.

If you are going to just bake for the sake of baking, start with something easy like banana bread or apple muffins where you only need ingredients that are relatively inexpensive and easy to find.

Something like a carrot bread or chocolate chip cookies would be nice. What about a carrot cake?


There really are no end of the choices, and, if you just picked two of these items, you will be baked out for a week.

Orange zest cookies

1/2 cup butter
1/2 cup sugar
1 egg yolk
1 cup flour
1/4 teaspoon salt
1 zest of orange
1 teaspoon vanilla
1 teaspoon orange extract
pecans, chopped fine
1 egg white


1.stir all ingredients together.
except pecans and egg white

2.roll into balls size of a walnut

3.dip in egg white and roll in pecans

4.bake at 350 degrees for 10 - 15 minutes


Banana Spice Bread

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup white sugar
2 eggs1/3 cup unsweetened applesauce
4 ripe bananas, mashed
1 tablespoon vanilla extract
1 cup raisins (optional)
1 cup chopped walnuts (optional)

Directions
1 Preheat oven to 375 degrees F (190 degrees C). Lightly
grease and flour a 9x5 inch loaf pan.
2 In a large bowl, stir together flour, baking soda,
cinnamon, nutmeg and white sugar. Stir in eggs, applesauce,
bananas and vanilla extract. Fold in raisins and nuts if
desired. Pour batter into prepared pan.
3 Bake in preheated oven for 45 to 60 minutes, until a
knife inserted into center of the loaf comes out clean


Blueberry Buckle

3/4 cup white sugar
1/4 cup shortening
1 egg
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder1/2 teaspoon salt
2 cups fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter, softened

Directions
1 Preheat oven to 375 degrees F (190 degrees C). Grease
one 8x8 inch pan.
2 Cream together 3/4 cup sugar, shortening, and egg.
3 In a separate bowl mix together 2 cups flour, baking
powder, and salt. Stir into sugar mixture, alternating with
milk. Stir in blueberries. Pour into greased 8x8 inch pan.
4 To make topping: Combine 1/2 cup sugar, 1/3 cup flour,
cinnamon, and butter. Sprinkle over cake batter.
5 Bake at 375 degree F (190 degrees C) for 25-30 minutes.


Carrot Cake
INGREDIENTS:
6 cups grated carrots
1 cup brown sugar
1 cup raisins
4 eggs
1 1/2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract1 cup crushed pineapple,
drained
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 cup chopped walnuts or pecans
DIRECTIONS:
1.In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
2.Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10 inch cake pans.
3.In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in the pineapple. Combine the flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed. Finally stir in the carrot mixture and the walnuts. Pour evenly into the prepared pans.
4.Bake for 45 to 50 minutes in the preheated oven, until cake tests done with a toothpick. Cool for 10 minutes before removing from pan. When completely cooled, frost with cream cheese frosting.


Cyndi Andersen’s Cookies

1 cup regular oatmeal
3/4 cup white flour
1/3 cup brown sugar (not packed)
1/2 cup shredded coconut
2/3 cup pecans - minced
1 teaspoon baking soda
¼ cup melted butter
2 tablespoons hot water
5 tablespoons honey

Preheat oven to 325. Spray baking sheets. Mix all ingredients together and roll into 24 walnut sized balls or teaspoon onto baking sheet. Bake for 12-15 minutes or until they turn light brown on top. Let cool on baking rack for 3-4 minutes and then transfer to a wire rack….. Store in airtight container for up to 1 month.
