well it has several purposes

the main purpose is to vent air from the front compressor section that wont be used in the turbine section of a jet engine. contrary to popular belief, the compressor section of the engine can produce more air coming in than its feasible for it to leave the tail pipe. so it is bled off to prevent problems.

the other purposes are for cooling and pressurization of the main fuselage during flight.

To power auxiliary systems in the aircraft such as aux electric and systems air conditioning.

More air bled = less efficient engine but also less air to breathe in the cabin. Which is why you get sleepier on Southwest flights - it's cheaper because they bleed less air to make engines more efficient, but the lack of oxygen makes you sleepy.
