The shell of the egg is a good protection for the egg but it is eventually not enough to keep the bacteria out. Also the food does begin to break down and you will not get all you need from it if it is not fresh.

aside from the fact that anything packaged in a cardboard carton starts to taste a little like everything in your fridge after a couple days -- I wouldn't want to risk the side effects of eggs gone bad

i think of they are fantastic. Eggs technicality are already "undesirable" whilst human beings purchase them from the shop. I used week old eggs in some cake I made final week and that they have been fantastic. till they colour of the yoke is off and the scent is off I say they are fantastic. i might upload some milk purely in case. solid success!
