Just like any filter, it would seem like it would be full of stuff we shouldn't be exposing ourselves to. Even eating the intestines, which we do when we eat sausage (sorry if you didn't already know that) seems a bit gross.

livers filter out poisons and other harmful substances and turn them into bile which is then sent to be kept in the galbladder for later help digesting food. The liver is not filled with bad substances

Yes, they are filters for the body and my naturopathic doctor always said not to eat organ meats. Makes sense to me. Why would you eat anything that would be used in the animals body to rid it of toxins, etc? There are some things, like iron, to be gained from the liver but wouldn't you rather take a good vitamin? Vitamins are formulated in such a way that you will absorb them. Iron needs a vit C source to be properly absorbed. As for the sausage, the lamb intestines are usually the ones used, you can find sausage in health food type stores that are in something else that is food based and digestible. Sometimes, the butchers in regular stores will give you sausage in bulk and it is already spiced but not in links. It can't hurt to ask for it this way.

They aren't filters like the mechanical filters we use (and regularly replace) in our machines and cars. Mechanical filters collect all the bad stuff. Your liver's job is to filter out the bad junk, and then get rid of it. That's what you're getting rid of when you sit on the toilet every morning: your liver's night's work.

If you don't like eating liver, then don't worry about. It's something of an acquired taste anyway as it's a little on the strong side. But don't worry about it being filled with garbage. It doesn't keep what it filters out.

And remember that what it filters out was originally food, so we're not talking abot massive toxins here. It's just the part of the food that doesn't really digest well.

Actually, when you cook them, if there are any bacteria or anything in them, they die. But as far as solid waste, they all go through the kidneys and the intestines. So the liver only gets the toxins that are liquid out of your system. Thanks for this great question!

I think its gross too. Thats why I don't eat it. I don't eat sausage either. It occured to me to read the ingredients and it really grossed me out. I don't go near anything that says mechanically separated.

You'd think so....never thought of it that way. Sausage is just the lining of the intestines hun, the rest is meat, veggies, etc.

Organ meats are high in cholesterol. There is a potential danger of mad cow disease if you eat beef organ meat.

Organ meats are high in Iron though, so people who are anemic may see some benefit.
