It is the brand they use when you ask for a drink or a cocktail, but do not ask for a specific liquor. For Example: If you ask for a Rum and Coke (Cuba Libra as we call it), they may serve you Bacardi (House liquor) and coke.... instead of any other brand.
Usually it is a cheaper brand, but not only because it is a low quality brand, it could be also the fast mover, high volume - with special prices from the broker or the distributor... sometimes this special offers make possible the Happy Hours.

house liquor is low end or cheep....its kept in the speed rack or well, which is located infront, down low behind the bar...the usual brand in a speed rack is STOCK.
the high end or expensive liquors are kept on display behind the bar, drinks that use the high end liquors cost more.
whether or not you get served house liquor depends on how you order a drink...do you say rum and coke or do you say Bacardi and coke, understand?
