Get a chicken breast, split it in half, but not all the way. Season it on the outside with whatever you want (salt, black pepper, cayanne pepper, lemon herb, etc.) place cheese inside the two breast halves (good, substantial cheese like Jarlsberg, swiss, maybe a good mexican cheese), stick toothpicks in to keep it closed if you want. Place it on a grill pan, about five minutes a side just to get it brown, then stick it in the over until done. Great.

I love chicken, but I've got to admit that broiling boneless chicken thighs, chopping them up, and putting them on a pizza with sauteed onions, bell peppers, barbecue sauce, and a couple of diced hot peppers is my favorite.

I do a chicken cordon bleu but instead of the ham slices use spam, I know this sounds nasty but the spam has a more pronounced flavor, so yeah, its not bad ..maybe i will call it spachicken cordon bleu, I dont know if you can say blue ribbon and spam in the same sentence.

take the chicken breast, pound it until it flattens, then soak it in Italian dressing for 2hours, then put chopped ham, swiss cheese and dijon mustard in the middle and roll it up stick it with a toothpick and stick it in the oven for 1/2 an hour at 350 degrees.

Looks like if you'll trying to gather up recipes for a cookbook, you are out of luck. There are more recipes than you could count to cook chicken, and they tend to already be in most cookbooks.
